Lazy Saturday

This past Saturday we woke up and felt that we really needed to enjoy the cozy Saturday morning. Instead of eating oatmeal like we usually do every morning, we decided to make old fashioned fluffy pancakes from scratch.

Making pancakes from scratch is a lot easier than what you think. You can find all the ingredients around the house. There’s certainly no need to buy those pre-made pancake mixes.

Here is the recipe.

Ingredients:

3 dl (1 1/2 cups) all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
2.5 dl (1 1/4 cups) milk
1 egg
3 tablespoons melted butter

In a large bowl, add flour, baking powder, salt, and sugar. If you have time you can sift all these ingredients but I didn’t do this.

Make a well in the centre and pour in milk, egg, and melted butter. Mix until the pancake batter is smooth.

Heat up a frying pan over medium high heat. Add a bit of oil to prevent the pancakes from sticking. Pour about 1 dl (1/2 cup) of the batter onto the frying pan. Wait until the batter starts bubbling before flipping. When both sides are light brown the pancake is ready to serve.

We ate them with frozen mixed berries and maple spread!

  1. I feel like I’ve been seeing pancakes everywhere lately, and boy are those tall stacks tempting! This is no exception, and I’m definitely getting close to giving in and just whipping up a batch too. I always forget how quick and easy they are until I’m already flipping them on a hot griddle!
