Brunch is a great way to start the weekend. It’s usually served between 9 AM to 2 PM but it can be eaten all day long.
For this delicious brunch we used a good quality loaf of bread, Dubliner cheese, Procuitto, home made nut butter and bananas.
Banana nut butter toast
Ingredients:
1 slice of good quality bread, toasted
1 banana
Nut butter – we used cashew & almond nut butter
Cinnamon
Directions:
Toast the slice of bread. Spread the nut butter, slice banana and put it on top of the toasted bread. Sprinkle cinnamon to finish.
Egg Procuitto sandwich
Ingredients:
1 thick slice of good quality bread
1 egg
1 slice of Procuitto
1 slice of Dubliner cheese or your choice of cheese
A few leaves of fresh spinach
Directions:
Cut a square out of the bread.
Wash and chop the spinach.
In a bowl beat the egg and add the spinach.
On a low to medium hot pan, put a drizzle of oil, toast the bread on one side for about 1 minute.
Add the egg mixture in the hole.
Add the cheese and Procuitto.
Take the cut-out piece and place it on top of the Procuitto, toasted side down. Turn heat down to low.
Gently flip the sandwich and toast the other side. You may need to flip the sandwich once or twice more to make sure the egg is thoroughly cooked.
