Keep Cool in the Summer!

What do you do when it is burning hot outside and you are trying to keep your kids and yourself cool?

Simple!
You make your own popsicles!

All you really need is popsicle molds of whatever kind you like. You can even make your own out of small yogurt containers.

You can use a variety of fruits and veggies so here are just a few examples of what you can make:

Strawberry Banana Popsicle
To fill 6 molds (depends on the size) use:
4-6 large fresh strawberries, washed (or use blackberries)
1 banana
1/2 liter (2 cups) milk

Mix in blender til smooth and pour into molds and place the stick into the mold. If you are using yogurt containers or the like, use a spoon as the handle for your popsicle.
Let sit in freezer for 2-4 hours.

To remove popsicle, pour hot water on the mold for a minute and gently wiggle till it loosens.

Pineapple Kale Popsicle
To fill 6 molds (depends on the size) use:
1/2 pineapple
A good handful fresh kale, washed
4 sprigs of fresh mint
1/2 cucumber

You have two options for this one. Use a juicer if you have one and you will get a smooth popsicle, or use a blender to get all the fibres included in your summer treat.
Pour into molds and place the stick into the mold. If you are using yogurt containers or the like, use a spoon as the handle for your popsicle.
Let sit in freezer for 2-4 hours.

Fruit Salad Popsicle
To fill 6 molds use
1 kiwi
1 nectarine or peach
1/2 banana or slices of melon
A handful fresh raspberries, blackberries or blueberries
Water or pure fruit juice (no sugar)

Wash and cut the fruits in smaller pieces. You can slice the banana and kiwi and stick them to the sides of the molds and freeze those for a few minutes before adding the rest.
Mix the fruit together and divide into the molds.
Fill up the molds with either water or pure fruit juice and place the stick into the mold. If you are using yogurt containers or the like, use a spoon as the handle for your popsicle.
Let sit in freezer for 2-4 hours.

Icicle

Water

Pour water into all molds and place the stick into the mold. Freeze for 2-4 hours.
To remove icicle, pour hot water on the mold for a minute and gently wiggle till it loosens.
This one is for little children who needs to stay hydrated and their parents don’t want to clean up sticky fruit juices 🙂
It also has no sugar and they love to eat it.
You could add a little fresh lemon juice or slices of cucumber to add a bit of flavour, but you really don’t need to.
