Tomato Bacon Pie

An easy dinner recipe is pie, and once you get the basics down, you can experiment with the fillings!

So here is how to make the piecrust, we use a mix of rye and wheat flour, but you can use all kinds of flour, what ever your preference is.

Ingredients:
100 g (3/4 cup) rye flour
120 g (1 cup) wheat flour
1 dl (2/5 cup) water
1/2 dl (1/5 cup) coconut oil
1 teaspoon fine salt

Directions:

In a mixing machine, with the hook attachment, add everything together and mix till you have a soft dough. Knead a few times by hand and wrap in plastic wrap and put it in the fridge for minimum 30 minutes. This is important for the finished result!!

Roll out to about 1/2 cm thick and butter the sides of a 28 cm (11 inches) pie pan. Place the rolled out dough in the pan and press it down and make sure the sides are completely covered and preferably have a bit of overhang. This will help the sides of the pie stay in the right height, because it does shrink a little bit when baked. With a fork, poke some wholes all over the dough to prevent air bubbles to form while baking.

Heat the oven till 200 C (400 F).
Pre-bake the pie crust for 10 minutes. Remove from oven and let cool while making the filling.

Tomato Bacon Pie

Filling:

230 g (8 oz) bacon, cut into small pieces
2 medium/large tomatoes, sliced
1 medium onion, chopped
1 handful green beans, cut into small pieces
4 sprigs of rosemary, chopped
4 sprigs of thyme, chopped
2 1/2 dl (1 cup) sour cream
1 egg
200 g (7 oz) cheddar cheese, shredded
Salt and pepper

Directions:

Wash and cut the vegetables and herbs and cut according to instructions.
Cut the bacon into small pieces and fry on a dry pan till semi crispy. Drain the fat from the bacon bits and set the bacon aside.
In the same pan, lightly fry the onions, green beans and herbs till fragrant. Remove from pan and mix with the bacon.

In a bowl mix egg, sour cream and grated cheese with a mixer. Add salt and pepper and mix again.

Spread the tomato slices over the pie crust and sprinkle the bacon and onions over top.
Pour the egg mixture over the bacon and tomatoes and make sure everything is covered.

Bake in the oven for about 30-35 minutes till the egg mixtures is firm and golden brown on top.

Serve with a green salad.
