Whole Roasted Chicken

Want to make a great meal for guests, but don’t have much time to do it in?
Make whole roasted chicken!

The preparation time is minimal and all you have to do it let it cook in the oven while you entertain your guests 🙂

Serves 4

1 whole organic chicken about 2,5 kg (5.5 lbs)
2 organic lemons
1 bunch of fresh parsley
Salt and Pepper
Oil

Heat the oven to 200 C (400 F).

Prepare a roasting pan with a grid on top so the chicken fat can drip down and away from the meat.
Clean the guts out of the chicken and pad it dry inside and out with kitchen towel.
Rub a good handful of oil all over the chicken and repeat with salt and pepper.
Wash and coarsely chop the parsley and cut both lemons in half.
Squeeze one half lemon into the chicken and place the squeezed half plus one more half lemon into the chicken. Then fill up with parsley and finish off with the last 2 half lemons.
With string or meat needles, close the chicken, so the filling stays inside.

Place the chicken on the roasting pan and the guts underneath the grid, and bake it in the oven for about 1 hour 45 minutes to 2 hours till the skin is crisp and golden brown and the inside temperature of the chicken breast is minimum 75 C (165 F).

While is it baking in the oven, you can baste the skin with the drippings a few times if desired.

Now take out the chicken and let it sit covered with tinfoil to keep it warm for about 10-15 minutes before cutting and serving.
You can pre cut the chicken before serving or serve it whole as you prefer.
