Candied Orange Peel

Candied Orange Peel is a delicious treat that you can make at home instead of buying it for $$$$$.

It is really quite simple and all you need is organic oranges, sugar and water, and a pot to boil it in, oh yes, and also: time!

Wash the oranges well and score with a knife into the peel to divide the oranges into quarters. Then gently peel each piece off and place in a large pot.
You do not need to remove the white part of the peel as it will almost disappear when cooking.
Repeat till you have peeled all your oranges.

We used 5 oranges, but you can use as many or as few as you like. You can also try other citrus fruits such as lemon or lime.
Cover with water and bring to a boil and let cook for 10 minutes. Let it cool and drain the water.

In a clean pot boil equal amounts of water and sugar. We used about 6 dl water and 600 g sugar.
Once the sugar is dissolved and the mixture is boiling add in the orange peels. Bring back to a boil and turn off the heat and put a lid on.
That was day 1.

For the next 7-14 days (depending on how you want your peels to be in the end), you bring the pot to a boil and once it is boiling you turn it off.
You repeat this step every day until the orange peels are ready. You can tell that the sugar water is starting to get thicker and thicker each day and once it is a nice thick syrup, your orange peels are ready.

Now you remove the peels from the syrup and keep them in an airtight container till you need to use them.
Pour the syrup into another airtight container.

You can use the syrup to put in your coffee, hot chocolate, use it in cakes and other treats.

The candied orange peels you can dip in dark chocolate (make sure it is tempered correctly, see here how to do that).
First you cut the orange quarters into strips of your desired size, then you toss them in granulated sugar and then you coat them in chocolate.

  1. Is it necessary to boil and drain water of orange skin won’t it cause to lose some of its flavour and aroma along with it’s bitterness
