Crisp Bread

It doesn’t get much easier than this. Making your own crisp bread might sound tricky, but it is so simple and takes very little time.
We make the crisp breads with a variety of seeds and nuts and you can even experiment with dried fruits and cinnamon for making them a bit sweeter. Here is the basic recipe we use and it is just crunchy delicious!

Ingredients:
1 dl (½ cup) pumpkin seeds
1 dl (½ cup) sesame seeds
1 dl (½ cup) oats
1 dl (½ cup) sunflower seeds
1 dl (½ cup) flax seeds
3 1/2 dl (1 ½ cups) rye flour
2 dl (¾-1 cup) cold water
1 dl (½ cup) oil
1 teaspoon baking powder
1 ½ – 2 teaspoons fine salt

Directions:
Add all the ingredients in a bowl and mix with a spatula or hand mixer till the dough is uniform.
Split the dough into two pieces and roll each one out between two sheets of parchment paper till about 0.5 cm (0.2 inches) thick. Place each piece on a baking sheet with the parchment paper and cut the shape of the bread that you want. Use a pizza cutter, cookie cutters in different shapes or a dull knife. Bake the breads in the oven at 200 C (400 F) for about 15-25 minutes till crisp.
Remove from oven and let cool completely. Break apart where you cut them and store in airtight container.

Serve with butter, cheeses, jams or simply eat them as they are.
