Avocado Bacon Breakfast Easy to make Egg Healthy

Eggs baked in Avocado!

Looking for a healthy start to the day? Look no further!

We have often, especially on the weekends, made this delicious breakfast dish.
You simply crack an egg in an avocado half (pit removed), bake it in the oven and eat for breakfast or brunch.

Here is how to make it:

Ingredients for two people:

1 avocado, cut in half, peel on, pit removed
2 eggs
Salt and pepper
Lemon juice

Directions:
Heat the oven till 200 C (400 F).

Cut the avocado in half, take out the pit and scoop out a few spoonfuls of the meat and eat it. This is done to make the hole big enough to fit the egg.
If the avocado needs some support to stay level, make a little ring of tinfoil and place the avocado on top.
Drizzle with a bit of lemon juice and crack the egg into the hole. Sprinkle with salt and pepper.
Bake in the oven for 15-20 minutes till the eggs are cooked.

Serve hot with crispy toast, and if you want to sway away from the healthy aspect of this dish, add some crisp bacon as well 🙂

    Ok, I tried it -it was very easy to make, and delicious! I had it for dinner…I might try it with salsa next time!
