Fresh Fig Salad!

It is fig season and we love to eat fresh figs as a snack or as part of our lunch or dinner.
Here is a simple and extremely easy salad that you just have to try. You will fall in love!!

Ingredients per person:

8-10 small ripe figs, washed, stem cut off and a cross cut in the top
1 ball of fresh mozzarella
4-6 thin slices of prosciutto or other dried meat
4 sprigs of fresh basil, washed
1-2 tablespoon olive oil
2 tablespoon honey
Salt and pepper

Directions:

Wash and cut the stem off the figs and cut a cross on the top. Gently press all four sides till they open and spread them out evenly on a plate to serve.
Drape the prosciutto around each fig and rip the mozzarella ball into smaller pieces and place around the plate. Drizzle the olive oil and honey over everything and sprinkle with salt and pepper. Decorate with the fresh basil sprigs.
