Spice Bars

Spice bars are an easy and healthy snack for you and your children. Bring it on trips, long or short, to stay energized and focused. It provides great nutrition and is much healthier than sugary snacks ☺

Feel free to play around with your favourite ingredients and make it your own. Maybe even make it a special treat and cover it with chocolate!

Ingredients:
Dates
Raisins
Tahini
Cashews
Almonds
Hazelnuts
Pumpkin seeds
Sunflower seeds
Coconut flakes

Spices:
Ground ginger
Ground cinnamon
Ground cardamom
Ground cloves (only use a little bit)
Ground nutmeg or maze (only use a little bit)
Cocoa powder
Pinch of salt

Directions:
Depending on how much you wish to make, you can adjust the recipe.

It is hard to say exactly how much to use of each, so you have to play it by ear and see how the spice bar mix feels to you.
Usually we use 1 part soft items and 1 part dry items. So the ratio between dates, raisins and tahini combined should be the same amount for the nuts and seeds. Roughly.

The spices are also for you to decide, add other spices or leave some out. Maybe try chili and dried apricots.
Be creative and use what you like in your spice bars.

Put the nuts and seeds in a food processor and grind till fairly fine. Remove pits from dates and add those into the food processor with the raisins and other dried fruit you like. Mix again. Add the tahini and spices and mix till uniform texture. It should come together in a firm but soft ball that you can roll out.

If the mass is too hard, add more dates, raisins and tahini. If it is too soft add more nuts and seeds.
Also adjust the spices as necessary. Taste as you go, as this is the best way to determine if you have your desired flavour.

Once you are happy with your spice mixture, roll it out on a piece of parchment paper till about 1 ½ cm thick (1/2 inch or so). Put it in the freezer for 20-30 minutes. Take it out and cut it into bars of your desired size. Put back in freezer in ziplock bags or airtight containers separated by parchment paper so they don’t stick together.
They keep for a couple of months in the freezer and you can also keep them in the fridge for a shorter period of time.
